Moms today have to be highly food conscious to lose all that piled up baby weight. Hence they sacrifice their love for some favorite items specially Pastries. Being concerned about my weight and cholesterol, I refuse to take even a slice of cake, though internally I crave to taste it.
By the end of the day what is there in life if you could not eat your best loved foods and enjoy with your family. So I decided to bake a cake which will waive away my concerns about eating pastry. This is a yummy low fat diet cake recipe to savor your food palettes without compromising your health in any form.
Low Fat Diet Cake Recipe
In my low fat diet cake recipe, I have used fruits, vegetables and nuts which are very essential for a healthy heart. I have replaced curd with butter milk as it has a lesser fat content in comparison with curd. Fiber rich whole wheat flour and palm sugar are also used as in my previous recipes. I have also made use of ghee instead of butter, as ghee decreases bad cholesterol levels.

- 1 Apple
- 1 Banana [green or red or whichever is available but it must be ripe]
- 1/2 Orange
- 1 Carrot
- 5 Walnuts [coarsely powdered]
- 5 Pistas [coarsely powdered]
- 5 Almonds [coarsely powdered]
- 2 cup Whole Wheat Flour
- 1 1/2 cup Palm sugar [powdered and sieved]
- 1 1/2 cup Butter Milk [not much diluted]
- 1 cup Ghee
- 2 tsp Baking Powder
- 1 tsp Baking Soda
- 1 1/2 tsp Vanilla Extract
Ingredients

- Keep all the ingredients handy.
- Peel off the skin from the apple, Cook the apple in the sauce pan with half cup of water until it becomes soft.
- Mash the apple and banana into a paste. Keep the paste aside.
- Sieve the wheat, baking powder and baking soda together until they are combined.
- Squeeze the orange and keep the juice ready.
- Grate the carrot and keep it aside.
- Now whisk the buttermilk and sieved palm sugar in a mixer until it is completely dissolved in the buttermilk.
- Add the banana apple paste to the buttermilk and whip them together for 10 secs.
- Transfer the mixture to a bowl. Add coarsely powdered nuts to it and mix well.
- Add grated carrot and orange juice and mix well.
- Add ghee and vanilla extract to it and mix well.
- Now add the sieved wheat flour slowly and mix well until the batter is smooth without lumps.
- Before transferring the mixture into the cake tray, line up the tray with parchment paper.
- First trace the bottom of the pan on the parchment paper and cut it.
- Cut the paper to cover the sides of the tray too.
- Now line up your cake tray with parchment paper.
- Transfer the batter to it.
- Preheat the oven to 250 degree celsius. I used OTG(Oven Toaster Griller).
- Bake this at 220 degree celcius for 30-35 mins until the tooth pick inserted comes out clean.
- Transfer the cake to the plate and pull out the parchment paper slowly.
- Now the nutritious low fat diet cake is ready to be served.
Tips
- Preheat the oven until both the rods turn red.
- While baking if you feel that the top layer of the cake darkens, then you can change the heating mode to 'Heat only the lower rod'
- I have used OTG (Oven Toaster Griller), if you are using a microwave oven you can adjust the temperature as required.
Nutrient values
- Walnuts and Almonds are rich sources of protein, fibre, iron and zinc. They contain unsaturated fats that help lower cholesterol.
- Pista has many skin benefits and possess anti-ageing properties, It is good for heart, prevents diabetes, boosts immunity and improves the nervous system.
- Apple often called as the “miracle food” and “nutritional power house” is rich in fibre content and vitamin C. It also contains polyphenol which functions as antioxidant.
- Banana is rich in fibre ,potassium, magnesium, vitamin B6 , and vitamin C.
- Orange is a rich source of vitamin C, dietary fibre and pectin.
- Wheat is a rich source of fibre, vitamins, minerals and various antioxidants.
- Palm sugar has low glycemic. It boosts energy levels and promotes musculoskeletal health.
- Ghee is Rich in Fat Soluble Vitamins A, D and E. It raises the good kind cholesterol (HDL) and lowers the bad cholesterol (LDL)
Side effects
There is no direct side effect associated with this simple low fat diet cake. However it is good to make sure, you are not allergic to any of the ingredients used in the making of this Eggless Fruit & Veggie Combo Cake.
